Like i have said before, i love apples with cinnamon! In my opinion, there is nothing better than a dense cake, with some soft fruits in it. So today, I will show you my recipe for my Spiced Applefilled Cake.
For the cake, you will need:
2 cups (about 256 grams) of all-purpose flour
1/2 cup (about 100 grams) of white granulated sugar
2 whole eggs
2/3 cup (about 158 ml) of milk (i use lowfat milk, but you can use a dairy-free milk)
1/3 cup (about 78 ml) of oil
1 teaspoon of vanilla
2 teaspoons of cinnamon
1/3 teaspoon of nutmeg
1 1/2 teaspoon of baking powder
A pinch of salt
For the apple filling, you will need:
2 apples, cut into quarters and then thin slices
2 tablespoons of sugar
1 teaspoon of cinnamon
- Preheat your oven to 375 degrees fahrenheit (about 190 degrees celsius)
- Spray a round baking pan or a springform pan with nonstick cooking spray and set aside (you can use butter to grease it, or even parchmentpaper. You can also use a square baking pan if you want to).
- Put the sliced apples in a bowl, with the 2 tablespoons of sugar and 1 teaspoon of cinnamon. Mix together with your hands or with a spoon, until all the apple slices are coated with the cinnamon sugar mixture. Set aside.
- In a large bowl, mix together the sugar, oil, eggs, spices, vanilla, salt, baking powder and milk until it is all combined.
- Pour in the flour and mix it until it is combined. (The batter is very thick, if you want your dough to be less thick, you can add a splash of milk at this point).
- Pour half of the batter into your pan and spread it evenly.
- Lay down the apples apples and spread the rest of the batter evenly over the apples (i layed my apples in a pretty way, because i felt creative, but you can do it the way you want).
- Bake the cke in the oven until a toothpick inserted in the middle, comes out clean with no wet batter on it. I used a very big springform pan, so my cake ended out thin. I baked
it for about 25 minutes, but keep an eye on it.
- Let it cool completey, slice it and serve with sweetened whipped cream.
